Brazilian Cheese Bread

I was introduced to these by my husband who spent 2 years in Brazil for a church mission. We first saw them in the frozen section at Whole Foods. We love looking at their frozen treat section we figure if Whole Foods sells it it can’t be that bad for us right?! He tried the frozen kind and said it just wasn’t quite like the ones he had in Brazil.

Fast forward a couple of years later and I am at a girls game night at a friends house. We were all asked to bring a snack to share with everyone. As I am looking through all the yummy treats everyone brought I find these little muffin looking things. I try one and they were delicious! They were light and fluffy but crispy on the outside. They combined my two favorite things bread and cheese. I started to talk to my new friend that brought them and she was talking about how she grew up Brazil where these were very popular. All the sudden a light goes off and I realize these are those little frozen cheese bread bites that my husband tried. Only these had never been frozen. My first thought was that these must be very complicated to make. After she gave me a little run down on how to make these I was shocked with how easy these were and that you make it all in a blender. I had never used or experimented with different kinds of flour so I had no idea what or where to get tapioca flour. I was told that Winco was the best place to get it. And sure enough I found it in the bulk section where they store food in big barrels and you scoop it out and pay per pound. My first attempt was success. They came out just right and my husband loved to have a little reminder of his time in Brazil.

These make great toddler snacks. They are quick and easy to make. They are the perfect size for little hands to pick up and eat. You can make them with your toddlers favorite cheese. This is also a great recipe to get your toddler involved. Let them crack the egg or pour the flour into the mixer. Or once they are out of the oven let them see how puffed up they got. Not only do these taste great but they are fun to make. Enjoy!

 

Brazilian Cheese Bread

Ingredients

  • 1 egg
  • 1/3 cup olive oil I have used Vegetable Oil and its worked fine
  • 2/3 cup milk
  • 1 1/2 cup tapioca flour
  • 1/2 cup shredded parmesan cheese any shredded cheese should work so use your favorite kind
  • 1 tsp salt

Instructions

Preheat the oven to 400 degrees

Put all your ingredients into your blender or food processor and blend till smooth

Grease your mini muffin tin and fill them to at least half full. I usually just fill them all the way up.

Bake for 15-20 minutes, they should be all puffed up and lightly browned

These are best when warm!

    Can you substitute other flours in this recipe or will it just not be the same?

      that’s a great question! I checked with Elizabeth and she says other flours just won’t work as well – it won’t turn out the right consistency. Hope that helps!
