I always have a hard time finding quick and easy breakfast meals that aren’t cereal, so when I found overnight oats I was pretty excited. These are super simple recipes and you can experiment with other overnight oat recipes by adding and trying new things. We were able to prep these in about 15 minutes. When I woke up I just pulled the jars out and popped them in the microwave for thirty seconds. Such an easy breakfast! The kids loved making it, and it was a perfect rainy day activity for all of us.
KIDS GET INVOLVED
The kids did almost the entire recipe themselves. I just helped pour the liquids into measuring cups and they took it from there. Nora loved stirring and adding the maple syrup- she likes anything that is sticky and messy. 🙂
I watched Jack try and figure out how to fill up the cup with the oats… he ended up just going straight for the container with his hand, measuring it out into the cup and then adding it. It’s fun to watch him problem solve.
EMBRACE THE MESS
Can you find Ironman? Ha ha! I didn’t even realize it was there until I was looking through the photos later. I guess I am getting used to having superheros strewn everywhere, so much so that they are now apart of my natural habitat. This recipe was a little messy with lots of oats scattered everywhere, but the kids really loved making it. My daughters favorite part of every recipe is eating EVERYTHING! She was eating plain oats with her bare hands and licking the maple syrup and brown sugar from off the spoon at the end. Atta girl!
Pumpkin Pie Overnight Oats
Ingredients
- 1/3 cup oats
- 1/3 cup pumpkin puree
- 1/3 cup almond milk
- 1 tsp chia seeds
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp maple syrup
Other toppings: pecans, walnuts or additional maple syrup
Instructions

Place all ingredients (except for toppings) in a mason jar and give them a good stir. Put a tightly fitting lid on and let it sit overnight. In the morning heat and add desired toppings.

Maple, Brown Sugar and Cinnamon Overnight Oats
Ingredients
- 2 cups rolled oats
- 1 tsp vanilla
- 2 cups almond milk (I used regular milk)
- 3 Tbsp brown sugar
- 3/4 tsp cinnamon
- 3 Tbsp pure maple syrup
- 1/4 cup pecans (chopped and toasted) I used walnuts
Instructions

In two mason jars place half of the milk, oats and vanilla. Stir to mix well

In a small bowl combine, brown sugar, cinnamon, syrup (I added nuts). Pour half of the mixture in each of the jars

Refrigerate jars for at least 2 hours, or overnight

Just before serving, toast pecans at 325 degrees for 5-7 minutes. Sprinkle over the top
ADULT TASKS: Poured milk into the measuring cups, and helped measure out the cinnamon.
KID TASKS: Measured and put oats in jars, poured milk over and stirred. Added remaining ingredients together and stirred. Spooned mixture over the oats and milk and stirred.

These turned out so good. My husband and I had some for breakfast and loved it. My kids who normally aren’t big fans of oatmeal ate the entire thing and were so excited that they had made it themselves. They couldn’t wait to pop them in the microwave and eat them up.
