Grab N’ Go Granola Bars: Back to School Snacks

I am always looking for easy, healthy snacks that I can throw in a sandwich bag and take with me.  Kids are hungry all the time!  It doesn’t matter if we ate an hour before we left the house, I always find them rummaging in my diaper bag looking for food.  This recipe is awesome for kids to make because it’s only five ingredients, it’s healthy and it’s a grab and go snack.

HOW TO GET KIDS INVOLVED

Kids can really do the whole thing.  The measurements are a little hard, but it was fun for me to sit back and watch them figure it out.  Jack spooned peanut butter into the measuring cup until it was full and then added it.  Instead of scooping out the oats with the measuring cup, he got in there with his bare hand and just poured oats into the measuring cup until it was full.

They especially loved the pressing down part- after putting the wax paper on and scooping the ingredients in, they just got to press on it until it was flat.  They loved it.  Good thing we didn’t share this recipe because Nora loved to press and then lick her hands and then press again.  Pretty gross, but hilarious.

EDUCATE WHILE YOU BAKE

I love giving the kids an instruction/problem and then watching them figure out a solution.  They don’t always do it the way I would do it, but they get pretty creative.  Sometimes the solutions are messy, but it’s worth allowing them the freedom to figure things out on their own.

Best Homemade Granola Bar Recipe (No Bake)

Ingredients

  • 2 cups oats
  • 1 cup almond butter (I used peanut butter)
  • 1/2 cup sliced almonds (I used whole almonds)
  • 1/2 cup mini chocolate chips
  • 1/4 cup honey
  • salt and cinnamon to taste

Instructions

  1. Combine the oats, almond butter, sliced almonds, mini chocolate chips, honey, salt and cinnamon.  Stir until well combined

  2. Line an 8*8 inch pan with parchment paper, allowing the paper to fall over the edges.  Press the oat mixture into the pan

  3. Place in the freezer for 45 minutes to an hour, or until firm.  Remove paper from pan then cut the large square in half.  Cut each half into six rectangles.  Wrap bars individually with parchment paper or plastic wrap and store in the refrigerator or freezer.

Adult Tasks

  1. Measured out some of the more difficult ingredients, like the honey.  Helped my son spoon peanut butter into the mixture, very sticky for him. Helped my kids line the pan with parchment paper.

Kid Tasks

  1. Measuring and adding the ingredients.  Stirring until well combined.  Putting in the parchment paper and then pressing the mixture into the paper until it is flat and fills all the corners.
