3 Ingredient Banana Egg Muffins

I am on a bit of a breakfast kick.  I love breakfast, and my kids love breakfast foods, so trying out new breakfast recipes is a win-win.  We have had fun experimenting and making some unique, creative breakfast foods that the kids have a blast with. I loved this recipe.  I didn’t really love the taste (a little bland to me), but my toddlers did, and it’s really healthy. Berries, bananas and eggs?  Awesome!  They ate about seven each. I put a little syrup over them and they were happy as can be.

KIDS GET INVOLVED

This recipe was so easy I literally could just stand back and watch while they did the whole thing.  The only time I had to step in was to put the muffins in the oven and take them out.  I let my younger one peel and chop bananas while my older one cracked eggs into a bowl and mushed it all together.  Then they got to fill each of the compartments with berries. Biggest mistake I made? Giving my two-year-old the bag of raspberries to hold onto until we got to that part.  She ate half the bag, good thing there was plenty for the rest of the recipe.  Can’t wait for you to try out this fun, easy recipe with your toddlers!

EDUCATE WHILE YOU BAKE

This was another great opportunity for counting and patterns.  I could give my four year old a pattern of numbers (For example 2,3,4) and watch him follow instructions sticking the right amount of raspberries in each compartment.  My two year old could count out two or three raspberries and add them to the compartments (before she just got distracted and started eating them again). 🙂

EMBRACE THE MESS

Can you guess which compartments my daughter filled?  Adding berries and pouring mix into compartments is going to get messy.  Most of the muffins came out completely uneven, but I wasn’t looking for perfection, I was looking for an experience.  I definitely got one.

And the finished product.  Was it my favorite flavor in the world?  Nope! But the kiddos loved it, and that is more important.

Toddler Made 3 Ingredient Banana Egg Muffins

Ingredients

  • 2 Bananas mashed
  • 4 eggs
  • 1 cup berry (any choice)

Instructions

  1. Preheat oven to 375 degrees

  2. Mash bananas

  3. Whisk in the eggs

  4. Spray a mini muffin tin with oil

  5. Add a few berries to each compartment and pour mixture on top until each compartment is filled

  6. Bake at 375 for 12 minutes or until eggs are set

ADULT TASKS: Cook the muffins and pull them out

  1. KID TASKS: Peeling, cutting and mashing bananas, cracking eggs and stirring them in, filling compartments with berries, pouring mixture over compartments
