This recipe was such a fun creative outlet for my toddlers. Was the final product incredibly delicious? To me, it really wasn’t, but the kids ate a ton of them and were proud of what they did. 🙂 They would be delicious with just raspberries, blueberries, cinnamon sugar etc. But the kids chose the ingredients and the point of the recipe was the kids, so I think the product was perfect.
GETTING THE KIDS INVOLVED
This was a perfect recipe to get the kiddos involved. To start, I let them choose what ingredients they wanted on the mini pancakes and they chose chocolate chips, raspberries and sprinkles. Not the best combination, but they loved them and had a blast adding all the ingredients at the end.
The kids also loved mixing the ingredients and cracking the eggs. It’s fun to stand back and watch what they do to crack open eggs. My son will chip off a piece of egg, then pull it off and then just let the egg drop out of the hole. It’s awesome to just stand back and watch the creative ways they figure things out.
They also really liked using the ice-cream scoop to fill up each of the muffin molds. Let’s be honest though, decorating was their favorite part. Most of the ingredients ended up in their mouths but, as you can see, there was plenty on the pancakes as well.
EMBRACE THE MESS
There were sprinkles, and batter and dough everywhere. The kids were eating chocolate chips and raspberries like crazy people, and my daughter was covered in red raspberry juice. But they laughed a lot, got creative, and were really proud of what they made. My son kept saying “make sure to save some for daddy, he’s going to love these!” The mess was worth the smiles.
EDUCATE WHILE YOU BAKE
I have read tons of articles on finding ways to let your kids learn to make decisions at an early age. I feel like I control so much of what they eat, so bringing them into the cooking process and allowing them to choose specific things is a lot of fun for them, and it’s a lot of fun for me to watch what they do. Although I didn’t love what they chose and probably wouldn’t have ever picked it myself; they did. This recipe really allowed them to be creative and I loved that.

Mini Muffin Pancakes
Ingredients
- Use any pancake mix
- Any toppings
Our pancake mix we used:
- 1 cup flour
- 2 Tbsp white sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup milk
- 2 Tbsp oil
Instructions

You can use any pancake mix for this recipe- so just mix up one really quick. You can use pancake mix out of the bag or make a homemade recipe- which we chose to do.

Preheat oven to 350 degrees

Have kids spray or coat muffin tins

Use any ingredients: I let my kids choose but you can use: blueberries, strawberry's, raspberries, cinnamon sugar, sprinkles, chocolate chips, rainbow chips, homemade jam etc.

Have the kids spoon the pancake mix into the muffin tin cups

Have kids put whatever toppings they want on top.. they LOVE this part.
ADULT TASKS: Pancake mix- measured out some of the harder stuff like milk, oil etc. Toppings- put toppings in separate bowls
KIDS TASKS: Pancake mix- adding ingredients together and stirring, cracking and adding egg. Greasing down muffin tin. Spooning pancake batter into muffin tin. Adding toppings
