Who doesn’t love a nice little frozen treat in the middle of summer? And how about one that’s so simple a toddler can make it? When I saw this idea in our PBS Do It Myself Cookbook I knew we needed to try it! This little item is sure to be a crowd pleaser. My main problem was that the cookies kept disappearing while we were making the sandwiches!
INGREDIENTS: ICE CREAM, COOKIES and SPRINKLES
We used Famous Amos for our mini sandwiches. I let the ice cream thaw a bit before having little miss two spread it onto the first cookie. But it gets melty pretty fast! Next time I’d try spreading it on when it’s more solid so it’s not as messy and it would hopefully stick together better in the cookies.
COOKING IS LEARNING: FINE MOTOR SKILLS
Having my kids involved in the kitchen gives them so many opportunities to learn and grow! Even though this recipe is incredibly simple, the kids were able to feel the cold and mushy texture of the ice cream… they practiced fine motor skills by spreading the ice cream on the cookie… and then stacking another cookie on top, and rolling it into the sprinkles. I love watching those little fingers in action. It’s also great practice at following instructions and learning an order to do things.
THE POSSIBILITIES ARE ENDLESS
I love the pop of color these sprinkles add to the ice cream sandwiches. I also love that you could make these with your favorite flavors of ice cream, and your favorite cookies! Or a specific color of sprinkles! Personalize them! I personally love snickerdoodles… I wonder if that would be good with chocolate ice cream in the middle? Mm now that’s something I need to try! Or maybe a homemade oreo cookie with vanilla ice cream in between… What are your favorite flavors of ice cream sandwiches?
The cookbook also has an idea to use chopped pineapples or strawberries, pre-frozen, to roll the edge of the cookies in – or for a savory swap, using crushed pretzel pieces instead.
Be sure to put the sandwiches in the freezer on parchment paper or a greased pan on a flat surface because my melty little sandwiches stuck to the bowl I had placed them in.

Mini Ice Cream Sandwiches
Ingredients
- 1 pint ice cream or frozen yogurt, any flavor
- 8 cookies, any flavor
- 1/2 cup sprinkles
Instructions

Let ice cream soften at room temperature for 10 minutes.

Place a cookie on the cutting board, flat side up. Spread with a scoop of ice cream.

Place a second cookie on top of the ice cream scoop and gently press together.

Roll edges of the cookie in the sprinkles. Place in the freezer until frozen again, at least 20 minutes.
