Were there egg shells in this egg salad? You bet there was! That’s what happens when toddlers make the entire thing. But, the recipe was really good and it was fun that the kids got to make our lunch today. They ate the entire thing, so they must have really liked it. And, besides the bites of shell, the flavor was great. I will definitely be having them make this lunch again.
HOW TO INVOLVE THE KIDS
This is such a great recipe to let the kids just take over. Hand them a bowl of boiled eggs and just have them figure out how to peel them. They were both concentrating and working really hard to get the peel off. Hand the kids a dull butter knife and let them chop up the eggs however they would like. My four-year-old chopped up the pickles as well. My two-year-old loved turning over the mustard bottle and watching the mustard squeeze out. This is such a great recipe to have the kids get involved in multiple ways.
EMBRACE THE MESS
When you give your kids a bunch of boiled eggs it’s going to get messy. At one point my daughter just went crazy and started smashing the eggs in her hands rather than dicing them… it definitely made for a softer texture. 🙂 The great part is they are learning and having a lot of fun cooking, so just embrace the mess and laugh at their creativity.
EDUCATE WHILE YOU BAKE
This recipe is a great opportunity for kids to practice their fine motor skills. Cracking and peeling all the shells off of an egg, holding a butter knife stable in order to dice the eggs or the pickle for older kids. Turning over a mustard bottle and then squeezing. All of these actions help them to develop precise movements in their thumbs, hands and wrists. Plus Nora loved all the textures of having a hands on recipe.

Easy Egg Salad
Ingredients
- 8 large eggs
- 1 large dill pickle
- 2 tsp dill pickle juice
- 2 Tbsp mayonnaise
- 3 tsp yellow mustard
- 2 tsp white sugar
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
Instructions

Boil the eggs and then let them cool

When eggs are cool to the touch, peel and dice

Whisk together all other ingredients in a large bowl. Gently fold in eggs

Serve as a side or on rolls
ADULT TASKS: Boiled eggs, helped with some of the smaller ingredients like salt and pepper
KID TASKS: Added all ingredients into a bowl and stirred. Cut the pickle into pieces and added it. Peeled the eggs and diced them. Stirred them into the sauce.
